his apprentice, Bruce Weinograd, and Weinograd’s wife, Maria—though they kept the name.

Like all good and important things, the doughnut was invented in New England, in its case by a ship captain’s mother named Elizabeth Gregory, who deep-fried dough spiced with nutmeg and cinnamon, put hazelnuts or walnuts in the center, and called them doughnuts.
